Slow Cooker Chili with Beef & Chorizo

This Slow Cooker Chili with Beef & Chorizo is the perfect lazy Sunday or game day dish! The hearty recipe is made with two kinds of meat, two kinds of beans and a blend of warm, smoky spices. And all you have to do is throw everything in the crock pot. So much flavor, for so little effort.

  • 2 Tsp Olive oil
  • 1 Yellow onion Diced
  • 1 Pound Ground Beef
  • 1 Pound Ground chorizo
  • 1 Can Kidney Beans Drained
  • 1 Can Pinto Beans Drained
  • 2 Tbsp Tomato paste
  • 2 Tsp Garlic Powder
  • 2 Tsp Paprika
  • 2 Tsp Cumin
  • 1 Tsp Coriander
  • 1 Tbsp Chili Powder
  • 1/2 Tsp Cayenne
  • 2 Tsp Worcestershire Sauce
  • 1 Tbsp Yellow Mustard
  • 1 Can Diced tomatoes
  • 3 Cups Chicken broth


  • Add olive oil to a skillet over medium high heat. Add the onions and saute until soft and fragrant, about 3-4 minutes. Add onions to slow cooker.
  • In the same skillet, add the ground beef and chorizo (along with a generous pinch of salt) and cook until browned, about 5-7 minutes. Add meat to slow cooker.
  • Add all the remaining ingredients to the slow cooker and stir everything to combine.
  • Cook on high for 2 hours. Then cook on low for another 3 hours.
  • Serve over rice, potatoes or corn chips (or by itself) with and top with shredded cheese, green onions, chopped fresh cilantro or sour cream if desired.
