
This recipe will officially be my go-to breakfast for the rest of the season. These Maple Pumpkin Yogurt Parfaits seriously make me feel like I’m eating pumpkin pie for breakfast. So cool, so creamy, fully of pumpkin and spice (and everything nice… sorry I had to).
And these parfaits are so simple to make, they barely qualify as a recipe. Just a few simple add ins to your favorite Greek Yogurt, topped off with Maple Pecan Granola. I just shared that recipe yesterday (check it out here!), and it’s the absolute perfect pairing for the sweet, tangy, pumpkin yogurt.
And lately, it’s been just the thing I need to brighten up my mornings.

I feel like I’m all about the little things lately. In the midst of this never-ending pandemic, an increasingly contentious election year, and now the wildfire threat (and really just climate change in general)… there’s just a lot of bigger picture things to be stressed about, much of it out of our control. So truly it’s the little day-to-day moments that can make all the difference as the long weeks drag on. A new outfit (even leggings count), a bunch of fresh flowers, a hot cup of coffee infused with cinnamon, a comforting (seasonal) recipe to try…
This little breakfast hack is just that for me. A small, simple thing to make the day feel a little more special. 10/10 would recommend.

An easy pumpkin breakfast…
This recipe starts with smooth, tart Greek Yogurt. I recommend using plain, non-flavored yogurt… we’re going to do the doctoring ourselves. Now, you can use regular yogurt if that’s what you have or prefer. It’s slightly less tangy than Greek yogurt, so the flavor may be a little sweeter in the end. But otherwise it works just fine.
Mix the Greek Yogurt with real pumpkin purée, maple syrup, and a dash of pumpkin pie spice. The maple syrup will sweeten everything up, and the pumpkin pie spice will add plenty of earthy warmth.
PRO TIP: If you don’t have pumpkin pie spice, no worries. A few dashes of cinnamon, ground nutmeg, ground cloves and ground ginger (or any combination of those that you find in your spice cabinet) will get the job done.
Use a whisk to really get everything combined, and make sure your mixture is super smooth and creamy throughout. Then it’s time to build.

I can’t recommend my Maple Pecan Granola enough as the perfect topping for these yogurt parfaits. The sweet, sticky, nutty crunch stands out so well against the tart, cool pumpkin yogurt, and the crunch of oats and pecans adds the perfect texture.
But you can totally customize too. Cinnamon granola, or another warm fall flavor you love will still make for that crunchy layered bite. You can also try adding chopped nuts instead. Fruit toppings like fresh blueberries, dried cranberries or pomegranate seeds would also create a delicious seasonal combo.
Anyways, grab the Maple Pecan Granola, and start layering up however your heart desires. I like to start with granola on my base, add a few layers, and end up with granola sprinkled on top of it all. No matter how you build it, it’s gonna be delicious.

Maple Pumpkin Greek Yogurt Parfaits
Ingredients
- 3/4 Cup Plain Greek Yogurt
- 1/2 Cup Pumpkin Purée
- 2 Tsp Maple Syrup
- 1/2 Tsp Pumpkin Pie Spice*
- Handful Maple Pecan Granola*
Instructions
- In a small bowl, whisk the Greek yogurt, pumpkin, maple syrup and pumpkin pie spice until totally smooth and combined.
- In a shallow glass or a small bowl*, layer peices of granola with spoonfuls of yogurt. You can also use the granola as a topping for the Greek yogurt, along with blueberries or pomegranate seeds.
