‘MAY’ THIS NEXT MONTH BE THE BEST ONE YET

Guys, we made it through April, and this was AFTER making it through March. Through social distancing, stay at home orders, and alllll that comes along with that, we’ve persevered, and we’ve made it here.

Hopefully, the upcoming second half of the year will bring more time outside, more time with friends and more chances to celebrate the everyday.

Here at Eat.Think.Live. I’m all about embracing the bright side…bright foods…bright thoughts…and find small ways to add brightness to my days. I can’t wait to share it with you along the way.

Speaking of brightening things up… you might notice I’m making changes here and there to the blog…moving things around and adding some graphics… and also hopefully adding some fun new content ideas into the mix. I hope you’ll bear with me as I play around and see what works here… and let me know if you like what you see! 💖

While we’ve been home and cooking almost every single night, I’ve been trying hard to stay focused on balancing my plates and incorporating as much produce as possible into our diets.

Also, maybe it’s just me… but the warmer it gets, and the closer we get to summer, the more I start craving FRUIT all the time. Fruit in my cocktails, in my salad, in my breakfast, as a snack… juicy colorful goodness all the time.

If it were just like 10 degrees warmer outside right now… I’d LOVE to be sitting on my rooftop, splashed across a lounge chair with some fresh watermelon slices and a cold glass of rosé.

Coming up on the blog this month, I’m bringing some light and fresh, produce forward recipes including:

  • Black bean and sweet potato baked tacos
  • Healthy and herby shrimp scampi
  • Moist lemon and raspberry scones

On the subject of produce… I’m getting really into learning more about gardening, and growing produce and herbs (obviously a very sustainable habit), and I can’t wait to share with you. Stay tuned for:

  • A post about the easiest and best veggies to start trying to grow at home…
  • An in depth look at the magical wonders of honey… and why this delicious superfood is so damn important for your body and for the environment.
  • Cocktails! 🍸🍸🍸 While. “Cinco de drinko” will have to take place at home this year, it’s the perfect occasion to whip up a festive cocktail (and maybe put on a real outfit?)

I can tell you one thing I’m definitely thinking right now… is I want to get out of this apartment! I want to go see my friends! I want to go sit at a BAR…anyone else with me?!

BUT…I’m trying my best to be cautious, and patient and SMART about things as restrictions start to loosen slowly across the board in the coming days and weeks.

I’m also trying to keep my expectations in check for what’s to come as life returns to so-called ‘normalcy’. Some things will be permanently altered and some ways of doing things may never look the same again. But I’m focusing on the truths that I control what I do, and I can be resourceful and adapt, and so can you.

Something else to think about…May is mental health month. It’s such a great time to stop and take stock of how we are all doing mentally. Reflect on how the last two months have affected you and the ones you love. How you’re feeling about what lies ahead. Stress, boredom, uncertainty, anger, confusion, restlessness, satisfaction, complacency, whatever you’re feeling.. it’s valid and it means something. Be curious about your thoughts and feelings and show some extra love as we all begin to transition…again.

May also happens to be national meditation month. I’m not really a big mediator (yet? I’ve heard so many good things about it, I’ve got a lot to learn) .. but I do know that it can do wonders for stress and mental health. So why not give it a shot?

ALSO!!!! It’s national pet month! I mean, yes for most of us, our pets rule the roost every day. But you know I always love a reason to celebrate the everyday. And these little guys have been right by our sides through all this craziness. Let’s show them some extra love. Look out for extra appearances from Pearl and Rocky on the blog and on social media this month. 🐶🐕‍🦺💛

I will say one more thing in relation to COVID-19. It’s still so important to remember that essential workers are sacrificing for us… and so many other businesses and brands are struggling to stay afloat. It’s more important than ever for us to keep each other in mind, and find ways to help each other out, and there are all kinds of ways. Here’s a unique idea…. I saw a blog post from Food52 recently about the ways you can support independent bookstores and cookbook authors!


I don’t need to remind everyone that Mother’s Day is next weekend! So many of us won’t get to celebrate like we probably planned to this year, but you can and should still show your mom some love (even if it’s simply a heartfelt zoom call). Of course, that’s not the only thing happening this month…that’s not even the only thing happening this week for some of us. Tuesday is Cinco de Mayo…the much beloved basic American tradition (because let’s at least be honest and love it for what it is). And then there’s Memorial Day….and who knows what that will look like. I’m afraid to get my hopes up about having a weekend getaway with friends…but there are plenty of socially distant ways you and your partner or roommate or whoever can enjoy the sunshine, and have a fantastic weekend to kick off summer. Stay tuned later this month for inspo on throwing your own backyard celebration at home, and a delicious one at that.

But for those of you who will start traveling again sooner than others… it’s important to be safe about it! I’ll be rounding up some expert tips on how to stay safe as we all start hitting the roads and the skies again.

Speaking of sunshine, did you know May is skin cancer detection and prevention month? It’s so important, because skin cancer is the most prevalent form of cancer in the U.S. with 1 in 5 adults projected to be diagnosed by the age of 70. Look out for more insight on why it’s so important to protect your skin, and some of my favorite tips and products for doing so!

I’m also working on a new post about how to give your face an HERBAL glow up!


One thing that will be occupying a lot of my life in May is more wedding planning! It’s been a while since I posted an update… but I’ve gotten so many things done and planned and the vision is starting to come together (after many many hours of research and headaches). From vignettes, to seating layouts, to table settings and more…. stay tuned for the latest!
