EATING NOW: WHAT’S ON MY PLATE THIS WEEK

Hello fellow foodies! It’s almost March but I’m still wrapped in a blanket (and drinking hot coffee) as I write this. I don’t know about the rest of you, but this time of year makes me HUNGRY! I feel like I want to snack all the time, and not on carrot sticks and hummus, if you know what I’m saying. I’m trying to stay focused on making my feels hearty and full, and making sure I have healthy snacks around for whenever I’m curled up watching Netflix (it is hibernating season after all.) Lately, I’m sharing some of my favorite winter recipes on the blog…including several that make use of my Dutch oven (or slow cooker).

This season has been a whirlwind in terms of travel. From Dallas, to Winter Park, to Los Angeles, to Portland and Seattle. I’m sharing some of my favorite restaurants from my trips, as well as everything I learned about biodynamic wine while visiting wineries in Willamette valley (now I just need to study up on the lunar calendar…)

A (wo)Man with a Plan

Looking for some inspiration for your menu this week? Here’s what’s on my 5-day meal plan for the last week of February:

  • MONDAY:
    • peanut butter toast with sliced banana and a drizzle of honey
    • chickpea and chopped veggie salad with napa herb vinaigrette
    • creamy chicken and mushroom soup
  • TUESDAY:
    • oatmeal with cinnamon, apples, almond milk & crushed almonds
    • chickpea and chopped veggie salad with napa herb vinaigrette
    • leftover soup (it made a big batch!)
  • WEDNESDAY:
    • greek yogurt with berries, drizzle of honey and granola
    • chickpea and chopped veggie salad with napa herb vinaigrette
    • Pork chops with apple, fennel & sage with cheesy skillet potatoes
  • THURSDAY:
    • peanut butter toast with sliced banana and a drizzle of honey
    • chickpea and chopped veggie salad with napa herb vinaigrette
    • pan seared salmon with garlic butter, lemon and spinach orzotto
  • FRIDAY:
    • oatmeal with cinnamon, apples, almond milk & crushed almonds
    • chickpea and chopped veggie salad with napa herb vinaigrette
    • date night out <3
  • SNACKS: this week I munched on roasted unsalted almonds, green grapes, fresh popped popcorn, and low-fat cheese sticks
