
Apple pie for breakfast, anyone? I support it. You can have just that, and still make it feel like breakfast, with this simple and delicious recipe for Apple Pie Baked Oatmeal.
This baked oatmeal is packed with some of the best flavors of fall. It’s made with fresh apples and cinnamon, plus pure maple syrup, making it a little sweet, a little spiced, and a whole lot of yum. Plus, it’s layered with apples on the top and bottom, and finished with an almond crumble topping, making this even more evocative of the classic, all-American dessert.

Apple Pie Baked Oatmeal is super easy to make with simple ingredients, many of which are probably already sitting in your pantry and fridge. You can use your favorite kind of apples for this recipe. Bonus points if you’ve got some fresh picked apples from the farm or orchard this season. The bright, tart, juicy flavor was made to be coated in butter, sugar and fall spices.
This recipe also makes for a fantastic meal prep option, for a hearty fall breakfast all week long. You can make it on Sunday, slice it into squares, and simply reheat for a few seconds in the microwave until it’s soft and warm and ready for you to dig in. You can even freeze all or part of this recipe if you need to. It’s a must have for your autumn breakfast rotation.

Making Apple Pie Baked Oatmeal…
Baked oatmeal couldn’t be easier to make. It’s easily customizable with a range of mix-ins and flavor combos. And at the end of the day, the oven does all the work for you.
The first step is to separately combine your wet and dry ingredients. In one bowl, whisk together 2 cups of old-fashioned rolled oat. You can substitute steel-cut oats for this recipe too, but I like the texture of the classic style. To the oats, add brown sugar, baking powder, and your fall spices — including cinnamon, ground nutmeg and ground ginger, along with a pinch of salt.
Then, in another bowl, combine your wet ingredients. Start with a cup of milk, and add maple syrup, melted butter, unsweetened applesauce, and vanilla extract.
Next, pour your dry mixture into the wet and stir until it’s combined.
To assemble your baked oatmeal, start with a 9X9-inch baking pan coated with non-stick spray. Thinly slice 2-3 large apples, and then lay out apple slices in. A single layer on the bottom of the baking pan.
Add your oatmeal mixture on top of the apples, and then add another single layer of apple slices on top.
Top it off with an almond crumble…
The final touch to this classic Apple Pie Baked Oatmeal is the crumble topping, with almonds with an added crunch.
To make this crumble, add flour, brown sugar, cinnamon and salt to a food processor along with a a stick of cold butter. Pulse the mixture until it forms small crumbs. Next, roughly chop up a handful of almonds and stir them into the crumble mixture.
Sprinkle the crumble topping evenly all over the top of your oatmeal and it’s ready to go in the oven.
Bake this oatmeal at 350F for 1 hour until the oatmeal is set, and the crumble topping is golden brown. You can store this oatmeal in an airtight container in the fridge for up to a week. You can also freeze the baked oatmeal either whole or after cutting into serving sizes, for easy reheating later.
This sweet breakfast treat is best eaten warm, pairs perfectly with a hot cup of coffee (preferable spiced with cinnamon), and makes for an easy, delicious breakfast option all season long — whether for a slow weekend or holiday morning, or a quick and festive weekday grab-and-go.

Ingredients
For the Baked Oatmeal
- 2 Cups Oats
- 1/2 Cup Brown Sugar
- 1 1/2 Tsp Baking Powder
- 2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Tsp Ground Ginger
- 1/2 Tsp Salt
- 1 Cup Milk
- 1/4 Cup Maple Syrup
- 1/2 Cup Unsweetened Applesauce
- 1/4 Cup Butter Melted
- 2 Eggs
- 1 Tsp Vanilla Extract
- 2 Cups Apples Thinly Sliced
Almond Crumble Topping
- 1/3 Cup Flour
- 1/4 Cup Brown Sugar
- 1 Tsp Cinnamon
- 1/2 Tsp Salt
- 1/2 Cup (1 stick) Cold Butter
- 1/2 Cup Almonds Chopped
Instructions
- Preheat oven to 350F. Coat a 9×9 inch baking pan with non-stick spray.
- Make the oatmeal: combine all the dry ingredients in a mixing bowl. In a seperate bowl, mix the wet ingredients and then add to the dry and mix until everything is combined.
- Add a single layer of apple slices on the bottom of the of baking sheet. Add the oatmeal mixture on top and spread into an even layer. Add the remaining apple sliced in a single layer on top of the oatmeal mixture.
- Make the crumble topping: Add all the crumble ingredients except the almonds into a food processor and pulse until it forms course crumbs. Pour the mixture into a bowl, add the almonds and toss to combine.
- Sprinkle the crumble topping in an even layer on top of the oatmeal.
- Bake for 1 hour.
